Ok, on the french part of the forum, we where talking about a device to run papywizard (or other softwares which will be able to drive the Merlin head).
As I mainly develop in Python, PocketPC is a good choice, because of the PythonCE port. I've just ordered a used one for 51€ on ebay (I should receive it this week). A cell-photo running WinCE should also work...
There are some other solutions, like Nokia 770, 800 and newer devices, which run Linux. I may order one to make some tests. Someone also posted something about this... thing:

I think it could be a solution for a complete DIY panohead, including electronic, because it can drive low-level chips via I2C or SPI bus; so interfacing stepper motors drivers is possible. But it is more expensive than a used PocketPC...

Ok, I finally bought a used Nokia 770 (61€ on ebay), last week, and after 2 nights developping (moving the toolkit from Tkinter to PyGtk), I'm able to run papywizard on it (see picture) 
I love linux.
I still have to see how to access to bluetooth device, to drive the head...

Interesting... I'll have a look at Moblin OS, to see if it is really open-source, or more like maemo, with some closed-source parts, and unequal support (like for the 770)... I also have to see what toolkit is available (didn't find the info yet).
But I will first dig arround the FreeRunner/Openmoko plateform, which is *really* open-source (even the hardware is).

I finally received my TC1100. Here is a short review...
First, this is a used devices, but still in very good state. I have to admit that this tablet is a really well built, like the Nokia 770. All mechanical parts are OK, nothing is broken and seems to brake soon.
The screen is perfect ; this is not a sensitive technology, so is much more resistant. Maybe not as accurate as a sensitive screen, but no problem to use it; far enough for Papywizard! The big advantage is that it acts like a mouse, and so, you can move the cursor wihtout clicking, so tooltip are active But I think that the screen is not better than the Nokia 770, so can be difficult to use in bright sun... I will try to find some filter to put on, to see if it can give better results.
I also like very much the keyboard, which can be detached. This is a good idea, as you reduce the weight if you don't need it. The seller has tested the battery, and found more that 2 hours of autonomy, which is not that bad for a used device. Don't know what is the autonomy of a brand new battery... Wifi also works fine. You can also connect an external monitor.
As I said, Papywizard runs out-of-the-box on the Windows XP Tablet edition, especially Bluetooth I didn't yet tried to connect to my AIRCable module, but I can scan BT devices arround. I will also soon install linux (kubuntu)
Ok, I will make more tests in the next days, and try to make a real pano using the Merlin head, outdoor. And I will install APP on it! I forgot to mention that there is an integrated SD card reader; this can be very usefull to make some ttest on the field, to check if the pano worked as expected.

No problem: the final size of the Papywizard window is larger that on a Nokia. And as it is possible to resize the shooting dialog, the preview area is fully usable up to 100x50 pictures.

I believe the touchscreen on the TC1100 only works with the tethered stylus and not with fingers or other objects - is that correct?

Yes, because this tablet can be used as a sheet of paper, so you have your hand on it ; a sensitive touchscreen wouldn't work.

Nothing; the window just automatically has the good size so all fits in. Except for the shooting dialog, because I set the dimensions myself (someone asked to have a larger screen; I have to find a solution there).

As the sun finally returned (after 2 days snowing; the mountains are great!), I made a test outside with the TC1100: it is much brighter than the Nokia 770. Not brighter, in fact, but less reflective, so the ambiant light is less annoying. And using a large font is very helpfull.
I will probably use this afternoon, too shoot panos at the end of the day...

Sounds good to me. I''ll keep an eye on eBay to see if I can pick one up cheaply (well you never know your luck).
It will be interesting to see what price the expected Intel Atom based MIDs (Mobile Internet Devices) are when they arrive in 2009.

Did you yet install APP on your TC1100 Tablet PC?
I just wondered how it performed.
I have run APP 1.4.2 (and Papywizard) on my old IBM Thinkpad T23 - 1.1GHz P3 and 1GB RAM with 20GB 5400rpm HDD, probably about the same computer power as your TC1100 Tablet PC? - running Windows 2000 Pro. APP runs fine but it's pretty slow stitching and rendering a 7-shot pano taken with my 6MP Nikon D40 and Nikkor 10.5mm FE lens - so not sure how viable it would be to use it to check if a pano had worked as expected in the field.

I didn't install APP yet. I think you're right, and it will not be possible to stitch full resolution images. But it is very simple to downsize them, or even use the embedded thumbnails (which are sometimes up to 1024x768), to make a quick preview.

Unfortunately the integrated SD card reader is limited to 1 GB. For now I read the SD via an external USB2 card reader.
I don't know if it is possible to read larger SD cards via a PCMCIA card adapter.
And I did not get the wireless connection working on my TC1100, it shows the router but doesn't connect.
So I am searching for right driver version.
