DUAL Graphic Cards in SLI, good or overkill???

Hi Guys, we recently got a new beast of a PC with dual GeForce GTX 1080ti cards =D because I was going to work with Ozos but we never got them so I'll still be using it to stitch videos from our 7 GoPro cam rig and an Insta360Pro. My question is would APV+Giga benefit, or be compatible, with both cards running as SLI configuration? or is it overkill and should return one?
On the same note, does anybody know if the dual cards on SLI would be beneficial using Premiere CC18 and AfterEffects CC 2018 working on 360 videos?

Could you do some tests and let us know how the CUDA rendering is affected? =D

Honestly we ended up removing one of the cards long ago, it gave us more issues than speed boost. Also AE didnt take advantage of them. As far as APV, same, no benefit because we render as Cineform or even 8k sometimes to preserve the quality so CUDA rendering didn't apply to our renders... :(
